A Cake Worthy of 35 Years

My daughter reminded me of years ago when we visited "The Bubble Room", a very quirky and famous restaurant in Orlando. Jim ordered red velvet cake, which was so huge we all had some, and it was probably the best piece of cake any of us had ever eaten.

Jaime suggested we find that recipe for an anniversary cake. She looked it up online and found it, though the original Bubble Room is gone. AND...she made the cake for us on the day after our big day. Wow. After I got over the shock of spending almost $5 for red food coloring, and buying two pounds of confectioner's sugar for the frosting plus a pound of cream cheese and untold amounts of butter...it was truly a spectacular cake. I am giving you the recipe, and urging you to make it. But this must be for something super-special, not just dessert for Sunday!

The World-Famous Bubble Room Red Velvet Cake

3 3/4 c. self-rising flour
2 1/4 c. sugar
1 1/2 tsp baking soda
3 eggs
1 1/2 tsp cocoa
1 1/2 tsp vanilla extract
1 1/2 tsp white vinegar
2 1/4 c. vegetable oil
1 1/2 c. buttermilk
1/3 c. red food coloring (this is NOT a typo)
16 oz. cream cheese
1 1/2 c. butter
2 lb powdered sugar
1 c. chopped pecans
Preheat oven to 350°
Sift together dry ingredients in a bowl.
Add eggs, vinegar, oil, buttermilk, vanilla, and food coloring and mix well.
Spoon into three greased and floured 9" cake pans.
Bake 45-60 minutes or until layers pull away from the sides of the pans. (Check after 45 minutes, they will probably be done then).
After cooling 10 minutes, remove the cakes to wire racks to cool completely.
Meanwhile, beat cream cheese and butter in mixer until fluffy.
Slowly add in powdered sugar and mix until fully incorporate and smooth. (Personally, I'd increase the pecans by a cup, and add them into the frosting here, but Bubble Room doesn't do that)
Layer the frosting between each layer of cake, and liberally over the top and sides. Top with chopped pecans.

Today is June 23, my 35th anniversary!!! This whole week I am going to give you little stories about our lives together; it has been an adventure, to say the least. By the way, Hypie has a neat tribute to us on his website, The Hyperion Institute. Go check it out; he put a lot of time into it. What a great tribute, to have kids who love and respect the fact that their parents have stayed married! Even among people my age, 35 is a big accomplishment. I play in retirement homes for the elderly, and most of them have been married upwards of 50 years, so no big deal. But for anyone 50 and younger, 35 years together is a record.

Speaking of retirement homes, Saturday I played in a place called The Gardens. Lovely place for assisted living, some in wheel chairs, a lot of them just as sharp as can be. After our hour together, several came around and thanked me. One precious lady peered up in my face and said "I wish you could play here every day." I thanked her, then she said hopefully, "Maybe you'll be in here soon, and then you can play for us all the time!"

Sounded like jail..."maybe you'll be in here soon." Bless her heart. When I asked them to guess what anniversary it was for me, they said 25, then 30. So, hopefully, I don't look old enough to be married for 35 years! And Byng, don't write me back how old I really look!

Well, I've just laughed so hard I cried. So I must share this with you. Some of these I have seen before, but there are some new ones too. My friend Virginia sent these after her brother sent them to her. Enjoy! (If you went to Sunday School, these will be hysterical to you!)

(THIS COMES FROM A CATHOLIC ELEMENTARY SCHOOL TEST. KIDS WERE ASKED QUESTIONS ABOUT THE OLD AND NEW TESTAMENTS. THE FOLLOWING STATEMENTS ABOUT THE BIBLE WERE WRITTEN BY CHILDREN. THEY HAVE NOT BEEN RETOUCHED OR CORRECTED. INCORRECT SPELLING HAS BEEN LEFT IN.)

1. IN THE FIRST BOOK OF THE BIBLE, GUINESSIS, GOD GOT TIRED OF CREATING THE WORLD SO HE TOOK THE SABBATH OFF.

2. ADAM AND EVE WERE CREATED FROM AN APPLE TREE. NOAH'S WIFE WAS JOAN OF ARK. NOAH BUILT AN ARK AND THE ANIMALS CAME ON IN PEARS.

10. THE SEVENTH COMMANDMENT IS THOU SHALT NOT ADMIT ADULTERY.

11. MOSES DIED BEFORE HE EVER REACHED CANADA. THEN JOSHUA LED THE HEBREWS IN THE BATTLE OF GERITOL.

12. THE GREATEST MIRICLE IN THE BIBLE IS WHEN JOSHUA TOLD HIS SON TO STAND STILL AND HE OBEYED HIM.

13. DAVID WAS A HEBREW KING WHO WAS SKILLED AT PLAYING THE LIAR. HE FOUGHT THE FINKELSTEINS, A RACE OF PEOPLE WHO LIVED IN BIBLICAL TIMES.

14. SOLOMON, ONE OF DAVID'S SONS, HAD 300 WIVES AND 700 PORCUPINES.

20. IT WAS A MIRICLE WHEN JESUS ROSE FROM THE DEAD AND MANAGED TO GET THE TOMBSTONE OFF THE ENTRANCE.

21. THE PEOPLE WHO FOLLOWED THE LORD WERE CALLED THE 12 DECIBELS.

WELCOME TO MY NEW SITE!

Introducing: NOTESFROMMARG.COM!

I no longer need to use blogspot in the name. My old name was not available, but I like my new name cause that's what this is...notes from me! And of course, the musical reference of "notes" is quite appropriate!
I'm putting my family's picture up again, so I can touch on each of them and what they are up to right now. Our oldest son, Hyperion, lives with us and is pursuing his writing. Landon lives in Atlanta and is almost finished with law school. Saralyn lives in Nashville and works in the world of business marketing, in a job so complicated I STILL can't understand it all. And Jaime lives with us, works here in town and sings whenever she gets the chance. They are all funny, very intelligent, and doing absolutely nothing about giving me a grandchild. (son/daughter-in-law first, of course)

Jim is working for a sign company but hasn't stopped hoping God will let him pastor again. We both miss the ministry. I miss being a pastor's wife and church music director. We don't understand this time of waiting, but must keep busy to survive. I'm now looking for piano students and playing around town in retirement centers.

So, that's the current status on the Marshalls. Our best times right now are getting together as a family. With all six of us laughing and entertaining each other, it's lots of fun. We enjoy books, movies, sudoku & crosswords, several of us like cooking, and ALL of us love being together.
Now, I'd love to hear from each of you! Marg

Here is Carly, my friend Virginia's first grandbaby. Four months old! They plan to take her picture with her bear regularly, which is a cute idea. Hard to believe some day she'll be big enough to hold that bear on her lap! And of course the best part of the picture, next to the darling baby, is the giraffe shirt!
